I was having issues too with my 3G iPhone being very sluggish but since updating to iOS4.1 my phone is more zippier - also tried the suggestion of closing all Safari pages & powering down - don't know if that made any difference though as since updating to iOS4.1 my phone has shown a marked improvement in performance - hope it helps you.
