I'm on a Mac - so these instruction are for Mac, but I'm sure Windows is pretty close.

Insert DVD into computer.
Close the DVD viewing program that will auto start.
Open Handbrake
It should automatically open a window to ask you to find the folder. If not, click "Source" - the movie clapper thing icon.
Navigate to the DVD and then to the "video_ts" folder. Select it.
Handbrake will search all the contents of that folder for the longest file - which will be the movie.
Upper right corner, click "Toggle Presets" if the presets are not showing. Under the presets, click "Apple" to show the Apple presets. Then click "iPhone & iPod Touch"
Under "Destination" make sure the new file is going where you want it to go and it's named what you want it to be named. By default it goes to my Movie folder with the name of the movie as it is on the DVD. I usually don't change this.
Click start. Sit back and wait. Takes about an hour or so.

Once it is done, take this new file and drag it from your folder to iTunes. You can now sync it to you iPhone.
