If you do nothing, your phone will know its roaming and will turn off data
transfer automatically.
It will warn you of this. Phone calls and texts will be expensive but the
local Italian carrier will send you a text with the costs so you'll know
what your in for.

You'll have no data unless you manually turn it on (very expensive) or use
wi-fi. There's a lot of free wi-fi all over Europe but not everywhere. Many
hotels will also have wifi either for free or for a nightly fee of about
€10.
