Select the phone in the device list in the left column then on the right
side go through tab by tab selecting what you want to sync (Info > Apps >
Ringtones > Music > Movies > TV Shows > Podcasts > iTunes U > books >
Photos) - I have done it so many times (each beta and final release since
2.0 over probably 8 different devices) I can do it in about 10 minutes then
just let it sync everything, takes 15-45 minutes depending on total amount
of data.
I will say they made it MUCH easier in iTunes 9.2 but deselecting all apps
and letting you choose which ones to sync opposed to selecting them all and
making you uncheck them - at least for those of us who have a lot more Apps
in our library that we want on our devices at any one time.
