If you really want to keep some of that list... I can and have done it a few times with ecamm's PhoneView for Macs.
It launches every time I plug in the phone and does some other cool things, like saving voice messages or texts on your computer. I don't bother trimming the recent calls often 'cause it grows so fast and although you can download several things from the iPhone, in order to upload (the newly trimmed list) it must reboot the phone.
It also gives you access to your media (or any iPhone's media--not just the ones synced to your computer) I'm now reading what it does and see I'm wasting some of its abilities.
There are probably more computer apps that can assist you in maintaining the data on your phone. This one is $19.95
