Ken,

Next time your wife's phone is connected to iTunes, simply click on
the name of the iPhone under devices (you said it is currently named
"iPhone") and after clicking on the name, you can rename it "wife's
iPhone" or anything you want. Same way you would rename a playlist or
such.
