Here's what I recommend though... And it's what I do:
I keep my original SIM in the iPhone. So I still receive messages.
I buy or bring a second phone (preferably a small one) and use a local (Italian for you) SIM. I use this to reply or call back. This is far cheaper than using the iPhone on roaming.
Also, I disable data connections by changing or erasing the APN.
I only use WiFi. (=
