Any photos stored in the "Camera Roll" are backed up - generally speaking
you (iPhone Users) are expected to import their photos at some interval to
the photo software of their choice (iPhoto, Camera Wizard, Picasa, etc) and
then they are synced back to the iPhone via iTunes in albums or whatever
other sorting you have done in your photo software. iTunes assumes that if
iTunes are still in the unsorted "Camera Roll" that they have not been
imported and therefore need to be backed up. The more unimported photos you
have, the longer the backup will take.
