Deleting:
go to the "Photos" app on your iphone, select the photo/image, so it opens, and then hit the trash can at the bottom of the page.

Sure you have not got them "synching" with itunes?
plug in your iphone into itunes.
Select the iphone so it gives you the summary screen.
Select Photos Tab, Turn off Photo synching, or unselect relevent photo collections.
